I went and search around and its supposedly that the JDK is not needed for monkeyC to function. only the jRE, so I went and installed the JRE (JRE v8u241). After that , I tried the eclipse installer again and yet again it gave me the same error line. Need JDK.
i am on 64 bit windows, so cannot comment really on mac. My issue was a while back so memory of details is not perfect. I did get the error saying it could not find JRE, even while it was present, would have preferred a better error message to state the number of bits was wrong. I think the issue was that eclipse and jdk has to have the same number of bits or it did not detect. Either that or maybe some component only supported 32 bit. Anyhow it was pretty easy to install both 32 + 64 bit JDK which solved my issue.
Along with all the above issue, I also get error with MQ connection. There was no mention about setting up a MQ in the developers index. What is MQ used for? Is there any documentation about it? Or, is there way I can disable the use of MQ?

Eclipse comes with differents configurations but there is always the same "eclipse" as core application. They are the same Eclipse with differents collections of plugins that you can install, remove and update trough the package manager integrated in Eclipse itself.That's why you can't find the Eclipse you want with an apt package manager.
You also do not need to install eclipse or java ( the .bin version from the Oracle website ), they can be unpacked in a local folder, for example you can unpack this two in your home folder and then add the -vm option to the eclipse.ini or launch eclipse with the -vm option, example:
I have imported my maven project into eclipse and using "install new software" option(comes under Help) I have added AEM Server(Name - AEM & Location - ). After that when I opened AEM as Perspective, I could see this option - No Servers are available. Click this link to create new server to create new server. There I have selected Adobe Experience Manager from Adobe and gave Server host name and server name. But in the next page instead of showing the resources from my imported project, it is empty and showing - There are No resources that can be added or removed from the server.
I am using eclipse - Version: 2020-09 (4.17.0) and Maven - version 3.9.0 and I tried with latest version of eclipse as well. I tried many things - reinstalling the eclipse, re-importing the projects, adding maven plugins from marketplace etc, but nothing is working so far.

Disregarding those reasons for the purpose of this discussion, I'd like to get a balanced view on where eclipse is worth adopting and where it (currently) brings no benefit. As well as whether it can be used in parallel, e.g. can different members of a development team chose to work predominantly in Eclipse and others stick solely to the workbench.

When you use the Eclipse Installer for Windows 7 32 bit there is a screen with a list of options on which eclipse to install. I know eventually I will be adding the CFEclipse add-on but I am not sure which base configuration to start with. Any info or direction would be much appreciated.
