Rhubarb Pie
2 cups chopped rhubarb
boiling water
2 egg yolks
1 tbsp melted butter
1 cup sugar
2 tsp cornstarch
3 tbsp cold water
Cover rhubarb with boiling water; let stand 5 minutes. Drain well.
Mix remaining ingredients; pour into unbaked pie shell. Cover with
pastry topping; seal pastry. These pies freeze very well. Freeze them
unbaked and pop into oven frozen at 350*F and they are just like
freshly baked. Bake for approx. 30-40 minutes.
