captions for individual images

I have searched here and in the user guide, but I just don't see how to add captions to individual uploaded images.

What do you mean by captions? Do you mean adding metadata or captions on the image file?

You can use the Image_Text plugin to add a caption on download. or you could use the Watermark feature, the setup of which is fairly clear in the config file.
