The short answer is: you can’t.
Have you thought about moving to multi-site?

You can have a “backup site” that is regularly stopped, backed up consistency and restarted.

The setup is:

- Gerrit on several nodes with High-Availability plugin configured


How much is “several”? 2? 3? 50? 100?

- Git repositories are stored on a shared block device (LVM logical volume + GFS2 filesystem)


That’s the main issue: you can’t have a “consistent snapshot” if the data is moving.

- The shared volume is mounted by the cluster resource manager (Pacemaker/Corosync + DLM + GFS2)
