The functionality of deleting projects in Gerrit is provided by the delete-project plugin [1].

Check its REST API here [2].

Bear in mind you could also just hide a project in Gerrit by setting its state to HIDDEN [3], in which case the project won't be discoverable anymore, but the associated data won't be removed from the server.
