I did an update on the wifi after successfully installing Remix OS as a single boot. However, prior to that, my desktop was operating as a "desktop" like on windows with folders and stuff. i was able to right click and everything. However, after the update to the wifi, the desktop now seems to be acting like a tablet. All of the apps snapped into place with scrolling screens. I am unable to right click anymore. Can anyone shed some light as to what setting I need to change to get it back to the original desktop operations?

You might be seeing what is called Launcher3. File Launcher is what you previously had and what you want back. The problem is with v3.0.207, Remix OS started developing Launcher issues. But you can try these steps:
Go to Settings, Apps, Launcher3, disable.
Now Remix OS will be forced to use File Launcher. Hopefully, you'll have all your shortcuts there again.

I seem to have the same problem.  When I find Launcher 3 in Apps "Disable" is greyed out.  I try to "Force Stop" but nothing happens.

You need to click on your Remix WIFI App (Blue WIFI Icon) and uninstall the updates - if you have two then find the one where you can uninstall the updates. Then you need to restart your computer. It should come back in Desktop mode but your desktop will be back to factory so you will need to set up your icons again and wallpaper. Best thing to do is change your Play Store settings not to auto update as updating the Remix WIFI app causes this issue.
