This course will examine the principles of sustainable tourism with strategies that could work anywhere on the globe including urban cities, natural environments and historically significant/preserved locations. As a part of this course, students will work on sustainable tourism projects for stakeholders in Costa Rica. There is a required 8 day practicum trip for students over winter break where they will conduct further research for their projects, perform community service and present their findings to their local stakeholders. A one credit, seven week course will conclude the work in Costa Rica.

Elsabé Engelbrecht, former Provincial Subject Coordinator for Tourism Education with the Northern Cape Province Department of Education in South Africa, has more than thirty years of experience as a teacher and extensive experience as a Tourism education manager. As a member of the National Training Team (NTT) for the South African National Department of Basic Education, she has been involved in the training of Tourism teachers and the development of Tourism teacher training material. In 2010 she was appointed writer of the amended national curriculum for Tourism (CAPS) and is currently Chief Examiner for the exit level examinations (grade 12) in Tourism. Elsabé was a member of the Umalusi research team from 2011 -2014 which investigated the quality of the curricula underpinning Tourism qualifications, its assessment and search for international examples of good practice to strengthen the South African qualifications.

Anya serves on the Executive Committee of the National Piers Society and has visited all 61 seaside piers in the UK!

Steve is a senior lecturer in Tourism, and currently delivers units on tourism development and planning, introduction to tourism, visitor attraction management and research methods. He has over ten years consultancy experience which has encompassed development projects, policy reviews and evaluations, market appraisals, environmental impact assessments, and social and economic assessments.
