Is there any reason why user accounts should not be deleted from
RedDot is they are no longer active? Or should they just have all
rights to all projects removed?

You'll get "unknown author" on any page they created or edited, including on any info placeholders you're using to call that information into the page. It's better to just revoke access than delete user accounts.

If it's just one or two users, it isn't that difficult but it is a
manual process and Gavin is correct in his comments about unknown
authors. So if that doesn't matter to you, then you are ok. You should
be aware that it doesn't matter how many users are in the system from
a license perspectve, only the active users impact that.
