I've windsurfed at Club Vass in Vassiliki on a number of occasions. Good
winds, excellent tuition, good safety, not too radical, big comfort factor
since wind cross-shore.

Someone has suggested Tarifa but I have no knowledge. Perceptions are that
it is more tricky, shorebreaks, offshore winds etc. All the potential
recipes for a disaster if you're not that good.

Any views out there ?

Tarifa is more difficult, exactly as you wrote.

Wind:
Vass: normally between 4-6 bf
Tar: between 4-9 bf

Waves:
Vass: no waves, no shore break
Tar: east wind: small shore break, waves depending on force of wind, can be
much more difficult to sail in. West winds: more waves, more shorebreak. It
is the open ocean. Therefore also less safety.

So, if you are not used to sail in waves, you can better go to Greece (in
summertime always sun, wind, nice villages, no crime!!!). If you want
something more challenging then Vassiliki, you can go to Paros/Naxos,
Karpathos, etc, altough Vassiliki has it advantages also:
- more nightlife
- winds always in the afternoon, so you can relax in the morning. On many
other places you have to be alert all day.

On the other Islands you can have stronger winds, and more waves (depending
on which place you go.

Have fun!
