All available from Side Off Video or from your local shop.
Personally like FUNdamentals because of Peter Hart. He's a funny guy.

Not sure what level your'e at, but the US windsurfing association has
some instructional stuff at its Web site uswindsurfing.org and they
also have a CD for $15.

I second the motion for sideoff.com and Peter Hart Video's .
I would stay away from some of the really old video's which still are out
there.
