There will be a restaurant that will have Joe's Stone Crab on the menu...

I have a question about that. Joe's in Miami Beach only serves fresh stone
crabs. How are they going to keep the claws fresh for a week? After stone
crabs have been frozen, their flesh becomes soggy and it sticks to the
inside of the shell. If anyone who works for Joe's is here on rtc, I'd love
to find out what they will be doing.

I would guess that at least off season, they would have to be frozen. Joe's
serves stone crabs year round in Chicago, and I read that they were shipped
frozen when not in season...

Yuck!! If I sail Spirit, I think I will eat at Joe's either night one or two
in season only. Nothing worse than frozen stome crabs, unless it's frozen
lobster tails.

While I am not an expert, I believe if stone crab is "flash frozen" it
is less affected than slow frozen. I know this is true for shrimp.
However nothing is like having them fresh; i.e. refrigerated, and no
more than 24 hours from catch!
