What is the difference between this and slaughtering beef cattle or
pigs? I suppose it is that we don't have cows and pigs for pets.

Don't know about chickens, but that certainly isn't true of pigs and
cattle. I suspect you don't know much.
Horses have been left out. A large source of food world wide, and a
specie that can feign affection and smarts, too.
