two basic ways to handle this (both used in various "mail" cultures) ...
first, is the "triangle" approach - create six (or more) triangles of mail,
align along the "drape" of the mail, secure the apex, then start linking down
the sides. this should define the "dome" needed to cover the skull over the
padded coif worn underneath ... faster of the two, but less esthetically
pleasing.
secondly, is the "tailored" approach where you add extra links into the matrix
(ie: instead of one-link-four, you make one-link-five) spaced evening
throughout the matrix ... this expands the diameter of each row (conversly, to
lessen the diameter, drop a link (one-link-three). much more time comsuming
than the first option, but makes for a more pleasing and better fitted mesh.

or third, start at the very top with one-link-eight, and expand out in
a circle adding four, then six, then eight links in each progressive
circular row. (And eight, eight (maybe ten, ten if you are making
this for a noble with a very large and/or flat head) on successive
rows.) {I use this pattern, adding four, six, zero to make the two
halves of juggling balls...}
