Stuffing made, bird stuffed, been in the oven for an hour now. The house is
getting that smell... no, not that one... the good smell.

T-Day is a lot of work, but I sure love it.

Same here Ed and John. John, we're headed up to NH and relatives' house
for the trad roasted style. And, I've got a bird thawing in the fridge
for my recent purchase of an electric deep fryer. (no propane or open
flame, for indoor use only asamof) Not that I think the flavor is
better, just a change of pace. Seeing we're on the road today, there
won't be the usual leftovers, hence our own bird this weekend.

I've never had a deep fried whole bird. I went to a renaissance festival
once where the turkey legs were all deep fried, though. Every time I think
about it, the thought of dealing with all that used oil turns me off the
idea. Enjoy the fact that someone else is doing the cooking for you!

As with a lot of things the prep can make a
difference. Brining before cooking by any method
is a given in my book. Deep frying tends to seal
in juices better but the window between perfect
and overdone is much narrower.

If I was doing T-Day at home I'd smoke it over
apple or pecan. The sandwiches afterward are to
die for.

If you drove a diesel you could filter it through
a few layers of pantyhose and add it to your fuel
tank.

Tom, we only went as far as Merrimack, which is just south of
Manchester. I know where Gorham is, nice country up there. That's well
into ski country.
