If you're only in Amsterdam on that day, you'll hardly have time to cover
all the options - Amsterdam's a big town, and there are a number of shops
worth visiting.
Probably the most central one (not the biggest, but they have some good
stuff) is Van Berkel (formerly Hampe) on the Spui, just off the main shopping
street (Kalverstraat). Guitars are upstairs, the best stuff is on the 2nd
floor.
Other interesting options are Dirk Witte on the Vijzelstraat (near the Munt
tower - 2 shops, one mostly electric, the other has keyboards downstairs and
the acoustics upstairs), Dijkman Music on the Raadhuisstraat, and Sacksioni
Guitars on the Ruysdaelstraat.
There are also a few interesting possibilities if you're looking for used or
"vintage" guitars, mainly electric but also some acoustic stuff: The Plug on
the Ruysdaelkade, The String on the 2nd Van Der Helststraat, and Palm Guitars
on the 's Gravelandseveer (right on the river Amstel, opposite Mulligan's
Irish Music Pub).
Of course in a town as big as Amsterdam there are many more music shops that
may or may not have stuff you're interested in. But if you have only limited
time to go shopping I'd say this sums up the essential stuff.
Unless you're looking for a classical (Spanish) guitar - in that case you
only have to visit La Guitarra Buena, on the Reestraat.
