Merriam Webster's gives it as "uilleann pipes: \'i-len\", with the e
actually being a schwa. Most commonly I've heard it as "ill-yen" or
"ull-yen", however (when it's not spelt "Union Pipes").

I don't speak the good Gaelic, but all the pipers I've had the good fortune to
meet (including Seamus Ennis) pronounced it "IL@n." Your spelling is the way
it's usually spelled, although it shouls be in Gaelic characters.

In computerese the @ sign is pronounced "at". Are you saying that Uillean is
pronounced ill-at-n/?

Speaking of uillean pipes, I recently got a copy of Davy Spillane's "Atlantic
Bridge". I quite like it so far. It's got Albert Lee (of early Emmylou
Harris fame), Bela Fleck, and Jerry Douglass as backup musicians.

Any other recommendations for good Uillean pipe recordings?

I think he used @ because it looks more like a schwa (pronounced "uh")
than anything else on the keyboard. Uillean is pronounced ill-uh-n.
