songs inspired by andean/latin music?

I am doing some research on the influence of South American music on "our
own" pop/rock music. Could somebody supply me with information/examples of
latin-inspired music that has made it in our mainstream music culture. One
example would be the song by Simon & Garfunkel using "El Condor Pasa."
Gloria Estefan has certainly "mainstreamed" some aspects of latin music.
Any other ideas?
