I believe it was Jim Stafford who sang that song.

I recently heard a very amusing song called "Cow Patty" on some
radio station playing older country music.

It almost sounded like Charlie Daniels was singing it, but I'm not really
sure.

Could someone please tell me who sings this song or send lyrics if
possible. Please reply via personal email!

Actually, corny as both movies are, they're pretty funny and have a lot of
country music. It's funny now to look at them and see people who are more
recognizable today like Barry Corbin (Northern Exposure), and others.

That was Jim Stafford from probably the late 70's. I have no idea of any
album it might have been on. The only part of the lyrics that come
directly to mind are right at the end:

Forty shots rang out
Forty people fell
Patty and the killer missed each other
But they shot that town to hell

Yippiee-i-a Cow Patty...

Definitely Jim Stafford.

His ONLY album releases:
Jim Stafford (old looking brown & beige photo cover)
Not Just Another Pretty Foot (sitting in tapestry chair w/1 bare foot)

He's in Branson these days - has his own theatre there.

He wrote a lot of his own songs or co-wrote them w/ David Bellamy (Bellamy
Brothers) - they're both from FL. Jim is originally from Eloise, FL. His
dad was a dry cleaner.
