My old hunting knife will not keep an edge anymore. Trying to field dress a deer this year, it was razor sharp but after a few minutes of use it was worthless...

Before you give up on the knife it could be nothing more than
changing the way you are honing the edge. If you really like the
knife you might be able to save it by taking it to a butcher and ask
him if he can put a new edge on it. After that all you will have to
do is run it over a butcher steel before each use.

I personally do not like knives with too hard steel. A relatively
soft blade that can be quickly touched up (and of course loses its
edge more quickly) is my preference. But if yours is dull almost
instantly, that obviously is not workable either.
