The original stock has the extractor rods that extend into the shotgun
and I don't see anywhere for the rods to go into the new one. Does
anybody have experience with this? Also how do you take the rods out
of the original stock?

Do you mean the action bars? They're part of the action slide assembly, not
the forearm. Once you have the complete forearm assembly off, you remove
the nut at the front (the choke tube wrench is handy for this, provided the
nut's not too tight), slide the factory forearm off the slide assembly, and
slide on the new one. If you have the short (6.75") tube (i,e, the factory
nut won't reach with the new forearm), you'll need an extended nut:

There are special wrenches that slide over the magazine tube so no
disassembly (apart from removing the barrel, of course) is required, but the
500's easy to strip, and not too difficult to put back together. Just pay
close attention to the instructions in the owner's manual.
You need the forend adapter. You can find it at Cabela's. Go to the

Geez...I wish I'd known about that. My solution to the same problem
involved a spate of cussing followed by a session with my Dremel
rotary tool ;-)
Luckily my dad has an older styled 500 so I stole his foreend grip
assembly. :D----
