What's the secret to keeping beets for a long period of time?
I use them for research and am constantly throwing out squishy dead
beets. What will help keep them hard and fresh longer?

I use beets for research on pigment extraction, and seem to have
to throw away a lot of squishy dead beets. What is the best
way to store them? At the moment their leaves have been
removed and they're on wax paper in the fridge.
