If anybody has any ideas about how get rid of bugs eating my Collard
Green plants without dusting them with Sevin dust, I would really be
grateful.

Two types of bugs eat my collards.

1. Green caterpillars (cabbage borers, perhaps). Keep an eye on the
collards and as soon as you see the big holes that these caterpillars
make in the leaves, go over the plants with a fine tooth comb killing the
caterpillars by hand. Examine the plants closely, the caterpillars are
usually the very same shade of green as the plants and are easy to miss.

2. Aphids. Usually found on the bottoms of the leaves. These I kill by
hand, also (yes, it's disgusting but organic). Homemade insecticide
kills them too (small amounts of liquid dishwashing detergent and
vegetable oil diluted with water and sprayed on).
