I just got KOF'96 for Saturn and its a very good translation.
However, one annoying quirk for me is that I can't configure the
buttons the way I want to! I have a arcade joystick from MAS systems
and would like to be able to assign punches and kicks to L,R,C, and Z
but the game only seems to allow you to assign these commands to
X,Y,A, and B. Am I missing something here?
any info appreciated.

The control options won't allow you to change the button config.
Rather,
Normal is similar to the arcade, where you have to hit a certain
button combination to taunt and charge up your pow meter.
Simple allows you to use the left and right buttons on the saturn
control pad to perform those actions.
Special assigns one button special moves to the l/r buttons, and x and
c buttons.
