May I announce the ability of Lancers En-Kor 1000 times targeting an
Angelic Protector, then sacrifice the Protector to a Diamond Valley to
gain 3002 life - EVEN when there is no damage to redirect? (setting up
a 'Shield')

Diamond Valley:

Lancers en-Kor:

Angelic Protector:

In short: yes, that works.

Alternatively, attack with the Protector, About Face it, and hit your
opponent with a 3002/2 flying creature.

Under 6E rules? Yes, you may. (Under older rules, you had to wait until there
-was- damage to use redirection, and could only do so during 'damage-prevention
step' ... but those rules were so Complex that they got thrown out bodily for
6th Edition, and replaced with the (somewhat) less complicated replacement/
prevention "shield" rules.)

Sure. As long as you wait for the 1000 Lancer abilities, and the 1000
triggered Angelic Protector abilities, to resolve and _then_ use the
Valley then yes, it works.
