Say I attack with a 4/4 creature, along with some others.
My opponent and I play whatever fast effects we wish.
My opponent declares a defender to the 4/4 : a 3/5 creature.
Can I now play a Howl from Beyond (for ex) on my 4/4 and kill
the 3/5 creature? Isn't the damage dealt already, after the
defense has been declared? Same with a Rat Growth. Can I
pump up the attacker after the defender has specified all
of the defenders?
I am aware that I can play instants such Guardian angel to
help a creature that sustained to much damage...or a Fireball
or Drain Life to finish off my opponent's creature which
sustained 4 hits to its 5 touhgness. BUT isn't the damage
that is dealt by creatures FIXED after defense is declared?

Yes, you can play a howl from beyond. There is a time for fast effects
between the declaration of the intention to attack and the actual declaring
of the attackers, between the declaring of the attackers and the declaring
of the defenders, and between the declaring of defenders and the dealing
of damage. So, in most cases, you should actually wait until your opponent
declares his/her defense before you howl.
For example, if you attack with more creatures than your opponent has, then
you might want to howl the unblocked creature so that damage gets through to
your opponent.

No there is a fast effect stage that allows players to cast fast effects
after blockers have been declared.
Combat goes like this:
1. Declare intention to attack. This is to empty the mana poll and give
opponent one last chance to cast any fast effects before the start
of the attack.
2. Declare attackers.
3. Fast effects.
4. Declare blockers
5. Fast effects.
6. Damage dealing.
You may pump up a creature during either of the fast effect stages (3 & 5).
If both players have agreed that they are through with the second fast
effect stage (5), damage is then dealt and at this point it is too late
to cast anything.

Yes.

No.
After blockers are declared, both players may use fast effects to
eg pump up creatures (etc). *Then* damage exchange happens.

There is a fast effects phase after blockers are declared but before
damage dealing. Fast effect such as giant growth and howl from beyond are
perfectly legal here.

Damage isn't assigned untill damage dealing, which is a separate phase of
the attack. Once damage is ASSIGNED, it is fixed and cannot be changed,
only prevented/redirected/whatever.
