If I have a way to untap her, and I target one creature with her, then
while that ability is on the stack, untap her and target a second
creature, what will happen to those two creatures?
I'm assuming I will gain control of them both, but what would happen to
them if she becomes untapped later in the game? Will each creature she
targeted be destroyed? Or would only the most recent one?

Since Merieke is one of the few tap-grabbers that is NOT a "tap and hold"
ability - she's not "as long as ~ remains tapped" - the usual answer about
"the duration ended before it started" doesn't apply here. However ... note
that the second ability is all one ability - so it doesn't -create- the
"When ~ leaves play or becomes untapped..." delayed triggered ability until
it _resolves_. If Merieke becomes untapped BEFORE then, there's nothing yet
made from that use of the ability to trigger - so nothing triggers right then.

So yes, you'll end up with control of them both ... and, yes, if she becomes
untapped (or leaves play) later that game, _both_ of them get a delayed
triggered ability triggering that will bury them. The first-targetted / second-
grabbed one got that delayed triggered ability made for it after Merieke
untapped - so it hasn't been used yet. If you see what I mean?

I do. But I suspect I'll have a difficult time convincing my playgroup
if I steal several creatures all at once. :)

Ri Berit. When Merieke Ri Berit leaves play or becomes untapped,

You'll gain control of both of them:

1: play Merieke's ability targeting creature 1.
2: play some ability to untap Merieke.
3: pass, opponent passes, untap ability resolves and you untap Merieke.
3a: if it's opponent's turn, then he or she gets priority here, assume a pass.
4: play Merieke's ability targeting creature 2.

stack at this point contains two of Merieke's ability, each targeting
a different creature.

5: pass, opponent passes, ability resolves. You gain control of creature
2 and set up delayed triggered ability "When Merieke Ri Berit
leaves play or becomes untapped, destroy creature 2. It can't be
regenerated."
5a: again, if it's opponent's turn, opponent gets priority instead of you.
6: everyone passes, ability resolves. You gain control of creature 1
and set up delayed triggered ability "When Merieke Ri Berit leaves play
or becomes untapped, destroy creature 1. It can't be regenerated."

Both of the delayed triggered abilities would trigger, and both would
resolve, destroying both of the stolen creatures.

Note that this only works because Merieke's 'as long as' condition never
becomes false between playing the ability and the ability resolving.
For the ones that say 'as long as [...] ~ remains tapped' like Rubinia
Soulsinger, the trick doesn't work, as the effect will never start if
you've untapped her before the ability resolves. From the Comprehensive
Rules:

418.3d Some effects from activated or triggered abilities have
durations worded "as long as . . . ." If the "as long as" duration
ends between the end of playing the activated ability or putting the
triggered ability onto the stack and the moment when the effect would
first be applied, the effect does nothing. It doesn't start and
immediately stop again, and it doesn't last forever.

Example: Endoskeleton is an artifact with an activated ability that
reads "{2}, {T}: Target creature gets +0/+3 as long as Endoskeleton
remains tapped." If you play this ability and then Endoskeleton
becomes untapped before the ability resolves, it does nothing,
because its duration-remaining tapped-was over before the effect
began.

For Merieke Ri Berit, this means that if you play her ability targeting
a creature and then she leaves play, the ability won't try to gain
control of the creature (if it was attacking you at the time, for
example, then it won't be removed from combat due to control change).

Sorry for the cross-post, but this is really a strategy post. I got
the idea from this post to .rules, and I'd love to revive that group
some. Responses should really go to that group only.

I had completely forgotten about Merieke in standard, although I have
a playset from back in the ice age era I never really got to use.

I played Vedalken Shackles back in the Mirrodin-Kamigawa days and a
new artifact from the Morningtide set appears to have made merieke
somewhat good.

I am not sure if a two-card combo can be good in the current standard,
but it looks to have some potential. I would like to have more
creatures that can abuse the ability, but cannot find any decent ones
that fit the bill (I miss Jushi Apprentice). Merfolk Looter might be
a possibility, but I would rather have card advantage than merely card
selection.
I like Ith because he can be used right away, but he could also be
suspended, wrath the board, then come in. (Post sideboarding in this
layout. Earlier versions had Wrath main).
