Starfield and enchantment creatures

Starfield of Nyx
Enchantment, 4W (Magic Origins, Mythic Rare)
At the beginning of your upkeep, you may return target enchantment card from your graveyard to the battlefield. As long as you control five or more enchantments, each other non-Aura enchantment you control is a creature in addition to its other types and has base power and base toughness each equal to its converted mana cost.

This implies that it changes the base power of all enchantment creatures when the condition is met.

Thus:

Eidolon of Blossoms
Enchantment Creature -- Spirit, 2GG, 2/2 (Journey into Nyx, Rare)
Constellation -- Whenever Eidolon of Blossoms or another enchantment enters the battlefield under your control, draw a card.

becomes a 4/4 and

Courser of Kruphix
Enchantment Creature -- Centaur, 1GG, 2/4 (Born of the Gods, Rare)
Play with the top card of your library revealed. You may play the top card of your library if it's a land card. Whenever a land enters the battlefield under your control, you gain 1 life.

becomes a 3/3, and

Nyx-Fleece Ram
Enchantment Creature -- Sheep, 1W, 0/5 (Journey into Nyx, Uncommon)
At the beginning of your upkeep, you gain 1 life.

becomes a 2/2.

Or is there a rule that prevents changing their base stats?

While the condition is met, actually. It's a continuous effect and gets
timestamped along with other continuous effects that change base
power/toughness, in that layer {7b} (and along with ones that change type, in
that layer {4}). {613.1,2}

It doesn't keep getting re-timestamped each time the condition is met anew.

Yep. 2/2 on its own {layer 7a}, 4/4 because the base numbers get changed {7b}.

Right. All while the condition for Starfield of Nyx's last sentence to be 'on'
is in effect.

Nope. Rather, there's rules that tell how to handle changes to their base
stats.
