Tap Land to cast Sol ring
Tap Sol Ring to cast Fellwar Stone
and before too long big and nasty creatures and spells are
appearing...
One question occurred to me. Can he tap his Fellwar Stone
to produce colourless mana if I haven't laid any lands yet?
He can't get mana of a particular colour since I have no
lands out to do this - so does it revert to colourless, or does
it mean that he can't tap it for mana?

Nope, he can only get mana of the colour that Your land(s) can produce,
and if You don´t have any land, he cannot get any mana from the Stone.
This is often abused (unintentionally) later in games, say after an
Armageddon or Jokulhaups, when players try to tap their Stones for mana,
even though the opponent does not have any land in play.
This also means that if Your opponent have Fellwars in play when You cast
Armageddon/Land Equilibrium, they won´t be able to get any mana from them
i.e. You don´t have to bother about the stones as mana-sources :-)

The generated mana is of the color the land would produce if tapped for
mana after applying any effects on that land (such as Phantasmal Terrain

The generated mana has any restrictions that the land's mana would have
had. For example, if they have a Mishra's Workshop you could generate

I believe it depends on what version card you are using. I know the
fourth edition ones cannot produce mana unless there is a mana
producing land in play for an opponent.
I have a vague recollection that the original will produce
colourless though.

Nope. If your opponent has _no_ land, then Fellwar stone will make
_no_ mana.
The versions matter for color: The Dark version can _only_ make
colored mana, but it will remove all restrictions on that mana since
it only copies the color.
The 4E version can make colorless mana, but any restrictions on the
original mana are still there on the generated mana since it copies
everything about the mana.

No. Neither version can be used at all when opponent has no lands.

It means he can't use it. Yes, it says "Tap for one mana"; the next
sentence, however, restricts what mana it can be tapped for, and
in particular means that no type/color of mana can be produced when
opponent has no lands. Not being able to produce any type/color of mana
is not the same as "Produces 1 colorless mana".

Not quite. The 4E Fellwar stone can produce colourless mana if your
opponent has a land which can produce colourless mana. The Dark
Fellwar Stone is _only_ allowed to produce coloured mana. It cannot
produce colourless mana even if one of your opponent's lands can.
Neither Fellwar can produce mana if your opponent controls no mana
producing lands.
