Do creatures which have protection from a color also gain protection from mass
effect spells of that color? For example, does a Protection from White
creature avoid destruction by Wrath of God or does the protection only apply to
targetted white spells?

No.

No, it doesn't.

It applies to
1. white targeted spells and abilities (may not target it),
2. white damage (reduced to zero),
3. white blockers (cannot be blocked by them).

A creature with protection from white can be killed by Wrath of God
because that spell neither targets that creature nor damages it (nor
tries to block it).

As the rulebook _specifically notes under Protection_, no.

Protection-from-foo does exactly three things:
1) the creature cannot be blocked by foo creatures
2) the creature cannot be the target of foo spells, foo abilities, or foo
enchantments
3) damage assigned to the creature from a foo source is reduced to zero.

It only applies to targetted things, creatures that are trying to block
it, and damage; Wrath of God doesn't do any of this, so goes straight through
it.

wrath of god does not target 1 creature it targets all.

Only targeted white spells cannot harm a creature with protection from white.
Mass spells without targetting (like Wrath of God) will still do their job.

Not quite true. Spells without targeting, but that _damage_ things
(like Hurricane), will still be effectively stopped; a Hurricane will assign
its damage to protected creatures, but the damage will then be immediately
reduced to zero by the protection.
Spells without targeting that do things other than damage (like Wrath
of God) will work just fine on protected creatures.

Alas no! Only if the word "target" appears on the offending card, is
the creature protected.

Note! Protection also reduces damage to zero. So although pestilance
does affect a white knight, the damage is reduced to zero, so it
doesnt do any harm.
