No. Stealing the tape won't record a new image over the old one.
The "target" is chosen when the equipment enters play. That is all.

and, this rule is the same also for cards that apply in general to your
prey, or not? (for example, realm of the black sun, the slaughterhouse....)

No. Cards like Realm of the Black Sun, Revelations, and Arcanum Chapterhouse
affect your prey but don't "target" that specific player per se. As soon as
your prey changes, those cards begin to affect your new prey. Similarly,
Slaughterhouse is used on your prey. If your prey is ousted, you have a new
prey who you can then use Slaughterhouse on.
Some cards require you to specifically target a vampire (or other card) when
they come into play such as Incriminating Videotape, Baleful Doll, The Rack (on
your vampires), etc. If that vampire leaves play (due to burning or an
ousting), this does NOT allow you to acquire a new target. The Tape or the Doll
just sits there looking pretty. And The Rack remains in play but doesn't
actually provide blood (until someone else steals it again).
