That is, if I play Dragonbound while Hagar is untapped, can I replace it
when my turn ends (effectively immediately)?

No. Multiple DNR clauses stack (so that the longest one wins out).

OK, but how is "on your turn" defined? Does it mean on *this* turn, or does it
mean if a card was ever played on my turn?
I play Blood Weakens. "Do not replace until a vampire commits diablerie."
No vampire commits diablerie before my next turn, and Hagar is never tapped
before my next turn.
On my next turn, one of my vampires commits diablerie, while Hagar is still
untapped.
It is my turn, and a card I played on my (previous) turn is about to be
Replaced.
Do I replace it now, or do I have to wait until Hagar's conditions are met?

By English definition of "your" and by the game definition of "turn" (which is
very similar to one of the English meanings of "turn").

If *this* turn is *your* turn, yes.
If *this* turn is not *your* turn, no.
That is, *your* turn means *your* turn.

But is suspect the answer is: card text.

... on *your* turn (in *your* discard phase to be exact).
At the end of *your* turn, Hagar's restriction (assuming it applied at all --
that is, assuming Hagar is untapped) expires, leaving only the Blood Weakens's
own restriction.

The question is asking:
Does Hagar care if the card was played:
* during this turn, which happens to be your turn?
or
* during any of your turns, but hasn't been replaced yet due to some
multi-turn restriction (and it happens to be your turn again when the
replacement would occur)?
Obviously, from the rest of your answer, the answer is the first one.

without being played, is it correct to assume that a weapon put in
play via Concealed Weapon / Disguised Weapon; or a card put on Storage
Annex are immediately replaced, independetly of wether Hagar is tapped
or not ?

That's safe to assume.
"While Hagar is untapped, do not replace cards you play on your turn
until Hagar taps or your turn ends."
"play" means "play in the normal fashion", and cards like the equipment
for a Disguised Weapon aren't played in the normal fashion.
