If I got it right, Pulled Fang is played during the Press phase
Does that mean that the aggravated damae it bestowes is
unpreventable ? Even with a flack jacket ?
Second question: if a vampire should go to torpor because he received
more damages than he had blood, can the opponent play Pulled Fang to burn
the vampire ?

No, Flak Jackets (and other permanents, or permanent-style effects
like Flesh of Marble) can be implemented throughout the round.
Damage prevention cards can only be played during strike resolution (for
some reason known only to the Rules Team).

Only if the previous damage had been done during the Press Step as well,
since the press step will not be reached if the vamp goes to torpor during
strike resolution.
