1. Nik has no blood on him. My minion phase begins, and he hunts. When his
hunt
is blocked, I play change of target. Now that he has attempted to hunt and
may not repeat, can he take some other action?

No. Empty, ready vampires cannot perform any action except "hunt".
If they cannot perform that (mandatory) action, then they are stuck,
and cannot act at all.
