If a single strike is composed of normal and aggravated damage, can the defender
choose which damage to prevent, or is it in a certain order?

Nope. You always prevent the normal damage first, thus maximising the
chances of burning the vampire.

Catechism is good.

The vampire playing the damage prevention effect chooses which damage
to prevent. He can choose to prevent the aggravated damage before
dealing with the normal damage, if he likes.

When applying the damage (burning blood to heal or burning blood
to prevent destruction), the normal must be dealt with first.

erm, wrong! read LSJ's post.....

you can prevent any damage you want, but once you've finished preventing
damage, normal damage is RESOLVED first, thus maximising the chances of
burning a vampire....

I understood it, though LSJ has posted to the contrary, that you always
prevented the aggro damage first. However, when applying the damage you
apply the normal damage first and then the aggro so that you maximise
burning a vampire (ie so that the vampire would be in torpor when all
the normal damage is done but still has some aggro damage left thus
burning them).
