Yes. Drawing Out the Beast's damage occurs at the end of the round,
no matter how the round ends.

No, because the effects of the strikes are simultaneous and instant.
By the time you have damage to prevent, you no longer have a Jacket.
Conversely, by the same principle, a vampire who steals blood can
use that stolen blood to heal damage done by the opposing strike.
Because by the time he has damage to prevent/heal, he also has the
stolen blood to burn to heal it.

prevent the side effects of the damage?
There are no side effects from the damage (except going to torpor, I
guess, if you can't heal the damage - which would be prevented, of
course, if you prevent the damage).
All of Fleshcraft's (or Bonecraft's) effect takes place when the
strike resolves.
Preventing part of the effect doesn't affect the other part.
Canceling the whole effect (by Dodging, for example) would work, though.

Taste of Vitae doesn't care how or by whom the damage was inflicted.
It will count blood spent to heal Carrion Crow's damage, for instance.
Damage prevention effects can prevent damage from any source(s).
Skin of Rock can prevent aggravated as well as normal damage, BTW.
