This probably has an easy answer: Fata Amria says that the vampire on
whom it is played can burn it in its controller's untap phase 'instead
of untapping', right?

Let's say the turn begins with the vampire _already_ untapped, (I
dunno. She blocked, had Fata Amria played on her, and then used Cat's
Guidance to untap.) Can she burn the Fata Amria? Or does it stay with
her, since it's burned 'instead of untapping' and she hasn't untapped
at all?

Thanks.

By my understanding you can tap a tapped minion (unless stated that
it must be an untapped minion) and untap an untapped minion (unless
it states that it must be a tapped minion).

So unless the card text states that the tapped vampires controller
can burn this card instead of untapping (4 obtained in the few boosters
I got and no card text to hand), if you are already untapped, then
you can theoretically instead of untapping burn the card, but still
remain untapped.

It certainly shouldn't stop you untapping any other way (e.g.
Homunculus)
anyway.
