Very modest spoilers ahead...
Taking a look at the 'dungeon' spoiler file, it appears that the Dungeons
of Doom are 25-30 levels deep as is Gehennom, so the dungeon could be as
many as 60 levels deep. Of course, in total you'll explore more than that
because there are also the 8-10 levels of the Gnomish Mines, the 5-7 levels
of the Quest, the 3 levels of Vlad's Tower, the 4 Elemental Planes, the
Astral Plane and possibly Fort Ludios. Thus, in total you'll have between
71 and 86 levels to explore.

It's somewhat random, but anyway it's somewhere around 55 when you
encounter the vibrating square. No panic, level 53 in Gehennom is perfectly
normal. 50 is probably the minimum number of levels.

There are a variable number of levels, varying from 50 to 60 levels of
depth (I'll digress on this later). Here's an extract from the spoilers
(get the file ftp.win.tue.nl:/pub/games/nethack/Spoilers/dungeon for
more information):
The Dungeons of Doom are 25-30 levels deep.
The Gnomish Mines are 8-10 levels deep.
The Quest is 5-7 levels deep.
Vlad's Tower is 3 levels high (it goes up, not down; bottom is V1).
Gehennom (Hell) starts on the level below the Castle, and goes down
25-30 levels, just like the main dungeon.
The Elemental Planes can only be accessed after you've found the Amulet
of Yendor. Then you can leave the Dungeons of Doom at level 1 and enter
them, to eventually reach...
The Astral Plane, where you must offer the Amulet of Yendor to your
god.

Side-branches and the Planes are not a part of the main dungeon. All
other special levels are (Gehennom is considered part of the main
dungeon here). Dead ends marked with an asterisk (*) are places that
you MUST visit in order to win. Gehennom consists of Mazes entirely,
except for some special levels with named demons.
So, as said before, the dungeon is 50 - 60 levels deep.
