My favorite rougelike for the last few years has been Ragnarok, dont ask me
why dont try to convert me but what I would like to know is what other
rougelike would enthrall me in much the same way that Ragnarok does?
I've tried most of the majors (nethak/angbaud) and nothing keeps me comeing
back like ragnarok...

Depends on what it is that you like about Ragnarok.

Nethack and Angband and... Omega? ADOM? Crawl? GearHead? Alphaman?
"Most of the majors" is pretty vague. Can you say what you found
lacking in Nethack? In Angband?

One thing I would guess is that all the commands where visible to me at the
same time and I did not feel I needed to consult a tome of knowledge to
figure out how to drink a potion.
The graphics while seriously dated do seem to be a plus but I dont think
thats it.
Oh yea and its relitive completness...the game is not undergoing testing and
is stable and well mostly bug free..

It is not SO difficult. Most commands are pretty intuitive (and take
in count I am not English native , so for one who is should be even
easier) - most roguelikes use the same commands or very similar.

Actually I prefer ASCII display. I find those "tiles" settings
cumbersome and ugly, and ASCII leaves so much for imagination ...

Try ADOM or Avanor (which is pretty much Avanor based, and while funny
to play still in early development. I think it is a good beginer's
game, for it is very easy to win) . I think they are a bit more
complex than Nethack plot-wise.

That's why you need to be more particular than "I like Ragnarok". The
very features that are your favorites may be the ones I see as
Ragnarok's flaws.

That's why first thing I do with a new roguelike is print out the list
of commands. Then it is available to me while I'm learning and it
doesn't eat up screen space.

I think there are a few places where it makes good use of graphics
(the overall game map of the worlds, for example), but mainly suffers
for it. The area you can see *properly* is very limited and the
un-Nordic nature of some monsters is made more blatant by the
graphics. I'd have much rather had an ASCII display and a proper
targeting function.
Oh, and Nethack and Angband can both be played with picture tiles.

That could be said for many other games. Except the "not undergoing
testing" part. Or if by "stable" you mean "unchanging". It isn't under
development any more, so no, it isn't changing. However, ADOM,
Angband, Moria, Crawl, Rogue itself and a fair number of other games
can fairly be called "complete". They don't *need* any more done to
them to make them good games.

Well, GearHead is still very much in active development, and it isn't
"complete", really. But if you're into giant man/animal shaped
fighting vehicles (often inaccurately called "robots"), then you might
give it a try. There looks to be a strong chance it may turn
picture-graphical one of these days, too.
The most prettiest picture graphic game of all is H-World/the Jungle,
but it is still in very early development and on hold while the
programmer chases spaceships.
Omega I haven't really played enough to comment on.
ADOM is the choice if you are looking for "plot". Lots of quests and
special NPCs hanging around. The combat is pretty good and the
targeting system is excellent (better than Angband's in some ways).
Several of the Angband variants, most notably ToME, also have a
substantial plot-and-world-development thing going on, but are not as
generally "finished" as ADOM. Although I will note, ADOM is the one
roguelike that I've decided is unstable enough to be worth backing
characters up. It does have a game-killing bug somewhere (although it
might have been caught in the 1.1.0 code, which is basically just
awaiting compiling).
Alphaman is a near future Gamma-World-ish game with a strong humorous
note to it. It is no longer in development. I wouldn't play it game
after game the way I do some other games, but I like some of the
features.
Dungeon Crawl is in quite active development and while it has some
bugs, I haven't seen any of the game-crashing variety. However, it is
quite difficult. It also has an interesting treatment of religion, a
large selection of races (also classes, but classes are basically just
bundled starting skills), and a short command list, which you might
find helpful. On that note, I should point out that ADOM has a very
long command list, although many of the commands are specialized and
you don't need to learn them all at once.
Avanor is not bad. Getting killed on the first or second hit is pretty
annoying though. I have to agree about Ragnarok, I was addicted to that
game for a good 2-3 months (a roguelike record for me :-)
