(not sure if this is the ideal group but...)

Which roguelikes should I play? Given the following facts:

I like dwarf fortress for its complexity but it often runs too slowly (especially in adventure mode sewers for some reason).

I love Caves of Qud, especially all the mutations, but the game is as yet incomplete.

Cataclysm is great- although I typically don't last more than a day.

No better group either. Good choice.

Dwarf Fortress and Cataclysm are both free-roaming roguelikes. You can
walk anywhere and do whatever you like up to some degree. This
suggests you might like ADOM which allows for wilderness exploration.
Tales of Maj'Eyal also has rich areas to explore.

Games having the most mutation stuff I know are:
- Dungeon Crawl Stone Soup: play Demonspawn chaos knights for most
mutating action but be warned this is not easy combination.
- Gumband: play Beastman Chaos Warrior. Unlike ZAngband this variant
has you manage a special resource for mutations called psyche.
which is like mana but only for mutation based powers.
- Xenocide allows you to splice your DNA with that of any creature
but sadly this game is incomplete and abandoned.
