Anyone know this game or one with a similar betting structure? I cannot
remember what to do with the three cards in your hand that would make you
"win" the pot! kind of a useless game without that!

Works best with 4 or more, but 3 can easily keep it interesting.
Betting: $0.25 ante; $0.10 after. (Trust me, it can get expensive.)
Rank of hands:
Straight Flush--two cards in order of the same suit.
Pair--2 cards of the same value.
Straight--two cards in order of any suit.
Flush-- two cards of the same suit.
Jack or better-- Jack, Queen, King, or Ace.
The Game:
Everyone antes a quarter.
Deal two cards to everyone including one extra hand in the middle (Bitch).
Look at cards and decide whether individual wants to stay in game.
Dealer calls 1, 2, 3, Drop 'em!
Individuals who stay must beat others as well as the Bitch.
Everyone who does not win must match-pot.
Game is over when only one individual stays and beats the Bitch.
Deal passes to next person who re-shuffles.
Everyone antes a dime unless they had to match-pot.
Deal and play again.
Notes:
If the deal reaches the initial dealer, then those wishing to stay
would match-pot to the player who beats the bitch.
If no players elect to stay, then respect the bitch and do NOT look at her
hand. (You gotta pay to see 'em!)
One option is have players pay $0.50 to buy the Bitch's hand if they
haven't looked at their cards. (You might allow other players buy the
replacement hand.)
I am sure you could come up with a similar ranking for 3-carded hands.

I also played a game called Rat Fuck in college, but it was a game of winning
tricks with decreasing number of cards each hand until one person won all the
tricks (starting with 7 cards the first hand). The dealer could call a trump
suit, lo-ball (low card wins trick), or no trump; winner of each hand becomes
dealer for next hand. Pretty mindless, designed to play while drunk.

Split up the deck amongst all the players evenly. Players go around
playing one card at a time, flipping their top card onto the pile in the
middle. The object is to win ALL the cards. How do you win cards?
During normal play, face cards and aces are special: When a player
flips one up, the next person in line must turn up a face card or ace as
well or the player playing the original face card/ace wins all the cards
in the pile, then adds them to the bottom of his stack. The next player
has a limited number of chances to take control of the pile: if the
original player plays an ace, the next player plays up to 4 cards until
he gets a face card/ace. If after 4 cards go by and he hasn't gotten
one, the original player takes the pile. If the 2nd player DOES get a
face card/ace, then he gets control and the NEXT player must get a face
card/ace. If a player plays a king, the next player gets 3 chances,
queens give 2 chances, and jacks give one chance. Obviously, this makes
jacks the most valuable cards. (Jokers are not used.)
Now, that's pretty boring alone. So here's the fun: Any time 2 cards
of the same rank are played immediately after one another (e.g. someone
throws a 7 then the next player turns up a 7 as well), everyone slaps
the pile like in Slapjack. First player to slap gets the pile. This
counts for ALL cards, including face cards. The best is when someone
plays a jack, then the next person throws up a jack as well. Someone's
feelings get hurt in that exchange. :)
Of course, even that is still too easy. So here's the really fun part:
Any time 3 cards form a run (like 4-5-6), you may also slap the pile to
get it. The catch is, the run can be ANY suit, AND in any *order*. So
you can slap 5-4-6. Aces count high AND low for this purpose, so you
can slap K-A-2 sequences (or 2-K-A or K-2-A, etc.) as well. This is
really where the game is won and lost, i.e. your ability to quickly
recognize triples.
Any time someone mis-slaps, they "pay" their top 3 cards to the bottom
of the pile (which doesn't count towards pairs and triples). When
someone runs out of cards, they aren't out of the game, as they can just
sit and wait to slap their way back in! That's also a possible way for
others to join in late. If you don't have enough cards to pay for a
mis-slap, then you go into a defecit and must pay back those cards when
you finally win some back. If you mis-slap while you are in a defecit
(regardless of whether you owe 1, 2, or 3 cards), THEN you are out of
the game.
Eventually, someone winds up with all the cards. A lot of people say
that this person is the winner. Of course, we made it harder still, and
upon getting all the cards, the player then goes through his pile
throwing each card down as fast as he can. Anyway may make any
legitamite slap during this phase, and if successful, wins all the cards
exposed to that point and the game resumes anew. The card-thrower-
downer may also slap the pile to prevent someone else from taking it,
but all the cards stay where they are. Generally he is better off
trying to get another card down before anyone recognizes a slap
("burying" the slap).
It's loads of fun, especially with at least 4 people playing. Some
other minor points: If someone runs out of cards while trying to match
a face card, then person playing the face card wins the pile anyway. If
the person who currently has control of the pile with a face card
mis-slaps, he BOTH pays the 3-card penalty AND loses control. Play then
continues on normally, as if no face card had been played (unless the
person trying to match plays a face card that caused the first person to
mis-slap). Anytime someone wins the cards (either through a face card
or from a slap), that person restarts the play. When the next-to-last
person with any cards plays his last, that is when the player with cards
left wins or goes through his pile (after picking up the cards on the
table first).
Some people play it as a drinking game, where you drink upon
mis-slapping or not being able to match a face card. That was new to
me, as I learned it when I was 14. ;)
