Depends on if you're winning or losing the match. ;)
I usually wait about 5 minutes. Maybe a little less if it's someone
that I run into frequently and know that we won't have any trouble
finishing up; a little more if it's someone I don't know or don't run
into frequently. I also try to leave the person a message indicating
that I did wait a reasonable amount of time and look forward to
finishing soon.

Some players are able to calculate the proper waiting time
over the table, but I find it easier to memorize the
following chart:
