How long is it reasonable to wait for someone to move before leaving
the game? I'd appreciate your opinion, as I don't wish to be rude to
opponents, but I'm sometimes been stuck waiting 10 - 15 minutes for
someone to move.

Depends on if you're winning or losing the match. ;)

I usually wait about 5 minutes. Maybe a little less if it's someone
that I run into frequently and know that we won't have any trouble
finishing up; a little more if it's someone I don't know or don't run
into frequently. I also try to leave the person a message indicating
that I did wait a reasonable amount of time and look forward to
finishing soon.

Some players are able to calculate the proper waiting time
over the table, but I find it easier to memorize the
following chart:

Opponent's Score
Your
Score: 1-away 2-away 3-away 4-away 5-away

1-away 5 min 7 min 10 min 15 min 25 min
2-away 3 min 5 min 7 min 10 min 15 min
3-away 2 min 3 min 5 min 7 min 10 min
4-away 1 min 2 min 3 min 5 min 7 min
5-away 30 sec 1 min 2 min 3 min 5 min

And of course, multiply the result by the square root of the number of
letters in the opponents last name...

Aren't you oversimplifying? What about gammon chances? What about the cube
level?
