Here's some information for anyone living where Tillamook Cheese is sold --
the Pacific Northwest and maybe other areas.

I had been limiting myself to their kosher cheddar because the label said it
used only vegetable enzymes. I decided to check with the company to see if
they had any other vegetarian cheeses -- meaning no rennet, which comes from
the stomaches of slaughtered calves. Well, what do you know? The Tillamook
Cheese company began using vegetable enzymes exclusively on January 1, 1996.
All of their cheeses are now vegetarian. The spokesperson did tell me that
some of their very sharp cheddar may still contain rennet, because they're
aged for 15 months, but she expected that the rennet-containing cheeses to
be all purchased and off the shelves shortly.

This is a real relief to my husband and me, since we love cheese, and this
company is a good quality cheesemaker. Thought I'd pass the word along to
any lacto vegetarians in the Northwest who might be looking for rennetless
cheese.

Peace,

Trish

As a Native Oregonian (we are snobs about that sort of thing around here) -
I concur! Tillamook Cheese is the BEST and still a hometown company. If
you ever get the chance to visit the factory, don't miss it! Not only is it
interesting and amazingly sanitary... they have the biggest ice cream cones
on the planet for $1.25! The Tillamook area has some of the prettiest
beaches in the state and Cape Lookout State Park.

THANKS A MILLION TRISH. My children love cheese and we only eat Tilammook. All
this time I was feeling guilty about the rennet part but now I can rest in peace
and eat my cheese.
