Coconut-Oatmeal cookies
3/4 cup butter or margarine
3/4 cup granulated sugar
1/2 cup lightly packed brown sugar
1 egg
1 cup whole-wheat flour
1 cup rolled oats
3/4 cup coconut
1/2 cup wheat germ
1 tsp baking powder
1 tsp baking soda
1 1/2 cups raisins
Cream butter, sugars and egg together thoroughly. Add flour, oats,
coconut, wheat germ, baking powder and baking soda; mix well. Stir in
raisins. Drop by spoonfuls onto lightly greased baking sheets.
Flatten slightly with floured fork. Bake in 350 degree oven for 12 to
15 min. or until light golden. Makes about 36 cookies.

Grams fat per cookie: 5.6
These cookies turned out better when I used half the butter and
replaced the other half with applesauce. They weren't quite so thin,
either way though, they were delicious.
