Florida Key Lime Pie

1 9 inch pie shell
FILLING:
5 egg yolks
14 ounces sweetened condensed milk
1/2 cup lime juice
TOPPING:
1 cup whipping cream
3 tablespoons powdered sugar
1 lime -- grated rind only

Preheat the oven to 350 F.
FILLING: Put the egg yolks in a large bowl and beat them with a whisk, just
breaking them and mixing them well. Slowly stir in the condensed milk. Stir in
lime juice; mix well. Pour the filling into the pie shell. Bake for about
12-15 minutes. Remove and cool.
TOPPING: Whip the cream, slowly adding the powdered sugar.
Spread over the pie and sprinkle the lime rind over. Serve at room temperature,
but refrigerate if not serving within 3 hours of baking.

Pier House Key Lime Pie

PIE:
14 ounces sweetened condensed milk
4 egg yolks
1 tablespoon cream of tartar
4 ounces Key lime juice
1 graham cracker pie crust, 9 inch
SAUCE:
2 cups Key lime juice
3/4 pound sugar

PIE: Preheat oven to 350 F.
Beat the egg yolks until they are a pale yellow. Pour in the milk and cream
of tartar at the same time and beat on medium speed of an electric mixer for 5
minutes. Add the lime juice and mix for 5 more minutes. Pour mixture into the
graham cracker crust and place on a cookie sheet. Bake for 15 minutes or until
the pie turns light in color. Refrigerate.
SAUCE: Mix ingredients together in a saucepan; bring to a boil. Lower heat
and simmer until sauce is a golden brown. Refrigerate until thick. Pour over
the pie before serving.

This pie will keep in the refrigerator for 3 days.

CRUST:
1 1/2 cups graham cracker crumbs
1/4 cup sugar
1/3 cup margarine -- softened
FILLING:
14 ounces sweetened condensed milk
1/2 cup lime juice -- from Key Limes
2 teaspoons lime peel -- grated
2 large eggs -- separated
1 cup whipping cream

Preheat oven to 325 F.
In a 9" pie plate, with hand, mix graham cracker crumbs, sugar, and margarine;
press mixture onto bottom and up side of pie plate, making a rim.
In medium bowl, with wire whisk or fork, stir sweetened condensed milk with lime
juice, grated lime peel, and egg yolks until mixture thickens. May add green
food coloring to tent mixture pale green, if desired.
In small bowl, with mixer at high speed, beat egg whites
until stiff peaks form. With rubber spatula or wire whisk, gently fold egg
whites into lime mixture.
Pour lime filling into pie crust; smooth top. Bake pie for 15-20 minutes until
filling is just firm. Cool pie on rack, then refrigerate until well chilled,
about 3 hours.
In small bowl, with mixer at medium speed, beat whipping cream until stiff
peaks form. Pipe or spread whipping around edge of filling.

Thoroughly mix the gelatin, sugar, and salt in a saucepan.

comes to a boil. Remove from the heat; stir in the grated peel. Add the food
coloring sparingly to give a pale green color. Chill, stirring occasionally,
until the mixture mounds slightly when dropped from a spoon.
Beat the egg whites until soft peaks form; gradually add 1/2 cup sugar, beating
to stiff peaks. Fold the gelatin mixture into the egg whites; fold in the
whipped cream. Pile into the pastry shell. Chill until firm. Spread with
additional whipped cream and edge with grated lime.

GRAHAM CRACKER CRUST:
1 1/4 cups graham cracker crumbs
1/3 cup margarine -- melt and cool
3 tablespoons sugar
1 pinch salt
FILLING:
4 egg yolks -- lightly beaten
1/2 cup sugar
1/3 cup key lime juice
2 1/4 teaspoons lime rind -- grated
2 1/4 cups heavy cream

Preheat oven to 375 F.
Combine all crust ingredients and mix well. Press into a buttered 8" pie
plate and bake 15 minutes or until lightly browned. Let cool completely on a
rack.
In top of double boiler, combine egg yolks, sugar, and lime juice. Cook mixture
over moderate heat about 10 minutes, until it coats back of spoon. Remove from
heat and stir in grated rind. Chill until mixture thickens, but do not let it
become stiff.
Whip 1 1/2 cups cream to soft peaks and fold into lime filling. Spoon into
baked crumb crust and chill, covered, for 24 hours. To serve, whip remaining
cream and pipe it onto the filling in lattice design.

PIE CRUST:
1 1/4 cups graham cracker crumbs
1/4 cup margarine -- softened
1/4 cup sugar
FILLING:
1/2 cup Key lime juice -- fresh
14 ounces sweetened condensed milk
4 egg yolks -- beaten
TOPPING:
4 egg whites
1 lime -- thinly sliced

CRUST: Combine graham cracker crumbs and sugar. Add softened margarine to
mixture and blend well.
Press mixture on the bottom and up the sides of a 9" pie pan. Shell can be
easily formed by sandwiching the mixture between 2-9" pans (grease the upper pan
so that it will release easily).
Bake for 5-8 minutes in an preheated 325 F oven. Remove and let cool.
FILLING: Use a mixer at low speed to blend the condensed milk and egg yolks.
Slowly add the lime juice Mix until it thickens.
Pour into the cooled crust and refrigerate overnight.
TOPPING: Whip egg yolks at high speed until meringue consistency Cover pie,
add lime slices and return to refrigerator for another hour. Serve chilled.

7 tablespoons cake flour
2 tablespoons sugar
1/4 teaspoon salt
1 egg
3 tablespoons skim milk
FILLING:
3 egg yolks
5 ounces Key lime juice
2 cans sweetened condensed milk
1 cup whipped cream

PIE CRUST: Mix all ingredients by hand in a mixing bowl. Shape the dough into a
ball. Roll dough out using a floured rolling pin and fit into a 9" pie plate.
Prick with a fork around bottom and sides.
Bake at 375 F for 12-15 minutes until light brown.
FILLING: Mix egg yolks, lime juice, and condensed milk with an electric mixer
until smooth and creamy.
Pour into prebaked pie shell and bake for an additional 15 minutes at 350~.
Allow pie to cool.
