Hill Country Eggnog Cake

Recipe By :Schepps Dairy

1 cup eggnog -- *see Note
1 pound butter
3 cups sugar
6 eggs
3 cups all-purpose flour
1 teaspoon lemon extract
1 teaspoon vanilla
1 cup red/green swirl white chocolate chips

*NOTE: If eggnog is not available, substitute 1/2 cup milk, 3/4 teaspoon
nutmeg, 2 teaspoons rum extract and increase vanilla to 2 teaspoons.

Preheat oven to 325 F. Grease and flour a 10" tube pan. Beat butter and
sugar, and add eggs, one at a time, beating well after each addition,
until very pale yellow at medium speed in an electric mixer. Add flour to
creamed mixture alternately with eggnog, beginning and ending with flour.
Mix just until blended after each addition. Stir in white chocolate chips
and flavorings. Pour batter into prepared tube pan and bake for 1 hour and
30 minutes or until a wooden pick inserted in center of cake comes out
clean. Cool in pan 10 minutes; remove from pan and cool completely on a
wire rack.
