Garlic Beef and Potatoes

Amount Measure Ingredient -- Preparation Method

4 1/2 pounds boneless chuck roast -- boned and rolled
3 potato -- halved
1 stick butter
2 cloves garlic -- minced
1/4 teaspoon thyme leaves
1/8 teaspoon paprika

Place roast, fat side up, in soaked clay pot. Surround with potato wedges.
Melt butter in small pan; stir in remaining ingredients. Pour butter mixture
evenly over meat and potatoes. Place covered pot in cold oven. Bake at 425
for 2 to 2 1/4 hours. Remove cover; bake until meat and potatoes brown, 5 to
10 minutes.

Noodle Bake

1/2 pound noodles -- fresh
1/2 pound ham -- shredded
1/2 pound green beans -- fresh blanched
1/2 pound mushroom -- sliced
1 14 oz. can corn
4 green onion -- chopped
2 tablespoons parsley
1 cup cheddar cheese -- grated
1 egg
1 cup cream

Water the pot. Place half the noodles in the bottom. Mix ham with vegetables,
parsley and some salt and pepper. Layer over noodles. Top with half the
cheese, then remaining noodles. Press noodles down evenly and top with
remaining cheese. Beat egg with cream and pour over. Cover and place in cold
oven. Turn oven on to 475F and bake 30 minutes. Uncover and cook 15 minutes
more, until top is crisp and golden.

Potted Beef Stroganoff

1/2 pound mushroom -- sliced
2 tablespoons butter
1 1/2 pounds flank steak
paprika
2 onion -- sliced into rings
1 clove garlic -- minced
1/2 cup beef broth
1/3 cup white wine
1 tablespoon Worcestershire sauce
2 teaspoons cornstarch
1 tablespoon water
1/2 cup sour cream

Saute mushrooms in butter until light brown. Lightly sprinkle both sides of
steak with salt, pepper and paprika. Spread about half of mushrooms down
center of steak; roll up. Place steak in soaked clay-pot. Cover with
remaining mushrooms, onion rings and garlic. Mix broth, wine and Worcestershire
and pour over steak. Place covered clay-pot in cold oven. Bake at 425 for 1
1/2 to 2 hours. Remove liquid, mushrooms and onions to skillet. Cover pot to
keep steak warm. Mix cornstarch and water and add to skillet. Heat and stir
until mix boils; cook, stirring constantly, until thickened. Remove from heat
stir
in sour cream. Cook until hot-do not boil. Slice steak; top with sauce.

Potted Steak and Sprouts

1 flank steak -- tenderized
spicy brown mustard
10 mushroom -- sauteed
1/2 pound cheddar cheese -- grated
4 potato -- sliced
1 package frozen Brussels sprouts
2 onion -- sliced

Spread meat generously with mustard and sprinkle with salt, pepper, and cheese
(reserve some of the cheese). Top with mushrooms, roll up and secure with
toothpicks. Place potatoes and onions in bottom of clay pot. Season with salt
and pepper. Place meat roll on top of potatoes and onions. Top with remaining
cheese. Arrange sprouts here and there around top. Cover and place in cold
oven. Bake at 475F for 1 hour.
