2 eggs
1 cup milk
1 tablespoon olive oil or cooking oil
1 cup all-purpose flour
1/2 teaspoon dried basil, crushed
1/4 teaspoon dried oregano, crushed
1/8 teaspoon garlic powder
2 tablespoons finely snipped pepperoni
1 cup shredded provolone, mozzarella, or pizza-flavored cheese (4 ounces)
You will need eight 4-inch Yorkshire pudding pans, 4 1/4-inch pie pans, 4
1/2-inch quiche dishes, or 10-ounce custard cups. Spray pans or cups with the
nonstick coating; set aside. In a medium mixing bowl use a wire whisk or rotary
beater to beat eggs, milk, and oil together till combined. Add flour, basil,
oregano, and garlic powder. Beat till well combined. Stir in pepperoni. Fill the
prepared pans or cups half full with batter. Bake in a 400 F oven about 20
minutes or till done. Sprinkle cheese on top of popovers. Then return the
popovers to the oven about 5 minutes or till cheese is melted. Remove popovers
from pans or cups and serve immediately. Makes 8 servings.
