This recipe serves: 6
Preparation time: 5 minutes
4 cups silken or soft tofu, drained
2 cups of peaches, pitted and chopped
1 cup apple juice, chilled
1/2 banana, peeled
juice of 1 lime
6 sprigs fresh mint, washed
Place the tofu, peaches, apple juice, banana and lime juice in a
blender and process for 10 seconds. Serve immediately in frosted tall
glasses garnished with mint sprigs.
