TABASCO HONEY-GLAZED CHICKEN
Serves 6 to 8
MARINADE
1/3 cup olive oil
3 Tbsp. honey
2 Tbsp. fresh lemon juice
2 Tbsp chopped fresh sage
12 small chicken-breast halves (bones in, about 4 lbs.), skin removed
6 small chicken thighs (about 1 1/2 lbs.), skin removed
GLAZE
1/3 cup honey
2 Tbsp fresh lemon juice
6 drops Tabasco
Mix Marinade ingredients in a large bowl. Add chicken and turn to coat.
Cover and refrigerate at least 3 hours or overnight, turning chicken
occasionally. Mix Glaze ingredients. Remove chicken, discard marinade.
Grill chicken 4 to 6 inches above hot coals 14 to 15 minutes, turning
once. Brush with glaze and cook 2 minutes longer. Turn chicken, brush
with glaze and cook another 2 minutes or until opaque near bone when
pierced with tip of knife.
