11/4 lb plaice or flounder fillets
1/4 cup extra-virgin olive oil
salt and freshly ground white pepper to taste
2 tablespoons capers
16 cherry tomatoes, cut in half
Rinse the fillets under cold running water and dry with paper towels ..
Grease a large ovenproof dish with half the oil. Place the fillets in the
dish and sprinkle with salt, pepper, capers, and the cherry tomatoes.
Drizzle with the remaining oil. . Bake in a preheated oven at 350 F for
about 15 minutes .. Serve hot.
